Our bank manager requests this cake for every birthday, baked by one of the other employees. It's a little different every year, with the fruit arranged very carefully on top of multiple layers of scratch baked cake. Last year the fruit covered the top, this year a wide diagonal stripe of fruit ran from corner to corner, with a whipped frosting and a drizzle of caramel. Between the layers? More whipped frosting and chopped fruit. It's got just the right level of sweetness. However you slice it, this cake is amazing!
